The pressure was off. My nets where dry and the freezer was brimming with red salmon for the long winter ahead. I parked the food saver in the cabinet and with a contented sigh closed the door.

It was now time to relax and enjoy the rest of the glorious summer that we are fortunate enough to have this year. I had a hankering to try the best salmon dish in town. There was but one answer to my thought. The Glacier BrewHouse.
Opened in May of 1996, the BrewHouse set a standard for casual dining in downtown Anchorage. Home to the only Alder wood fired rotisserie in the state of Alaska, and uniquely accompanied by a mesquite grill and Birch fired piazza oven this fine eating establishment is without reproach. A warm and open atmosphere greets the hungry traveler seeking a relaxed experience. The blues and contemporary music misting in from overhead seems to melt in to the surroundings. Very cool tunes.

 Whether you have reservations for a special affair or are seated at the bar the service is the same. Excellent. From the moment you are greeted to the time the bill is settled a very happy and knowledgeable staff provides seamless service. A well orchestrated movement that just seems blend in with the decor; everyone will have the same experience, Great.

Beverages, more than you can mention in a single breath. With no less than seven finely crafted fresh beers made on location, the Glacier BrewHouse earns a top ranking. In addition to beer, house made crème soda, root beer, and lemonade give this place the hat trick of brewing success. With a full bar and extensive wine menu selection one would wonder why you would go anywhere else. Of special mention is the “Brown Bag Wine List“. In the past it was served at your table in brown bag as a tongue and cheek.
Although no longer practiced, this selection is anything but “brown bag“. This list is for the discriminating guest. Rare and sometimes hard to find or just good price to value wines are featured. Ever changing and interesting this is worth a look.
My favorite Starter is the cambozola and roasted garlic. Fresh baked flat bread seasoned with fennel served with cambozola cheese, wood oven roasted garlic, grapes and fresh strawberries how can you go wrong such a delightful mixing of flavors.
I need to mention at this point that all breads with the exception of one are baked fresh on the premises; the table bread is baked by café Europe and uses the spent grain from the brewing process in house. This is very hard to beat.
Salads are made to order for the freshest experience. Only the best ingredients available daily makes it past the demanding requirements of Chef Eric DuBey, and with valley veggies beginning to peak a real treat is in store.
“Our prep cooks start at 5:30 am to insure that your salads will be crisp, your food fresh and flavorful and your meats tender.
Said Chef DuBey.
“We use only the freshest seafood available and our goal is to provide the customer a consistently great meal every time.”
He continued.

Chef DuBey is a local that everyone can be proud of.  Raised on the Kenai Peninsula he got his start at the Alaska Votec center in Seward. From there his experience was enhanced by the Art institute of Seattle. He made an impressive tour of the Puget Sound area including Rays on the water front. Returning to Alaska he worked at Lake Lucile and after helping to open the Marriott hotel downtown he assumed the duties of Chef for the Glacier BrewHouse. A real local success story.

The list of entrees is the toughest part of the menu. The choice is agonizing to say the least. It requires multiple visits to explore.

Bbq Salmon
The Bourbon BBQ Salmon is out of this world. Fresh Alaskan Red Salmon alder wood grilled and brushed with a signature bbq sauce, baby arugula salad and a sweet balsamic reduction. Wow, noting less than wow! The salmon flakes perfectly to the touch of a fork and when you bring it to your mouth it greats the tongue with a delicious full spicy flavor of “bang”. Accompanied by mashed red potatoes and a delicate but flavorful salad this dish is truly, one of the finest plates of salmon that I have ever tasted in Anchorage.
I had to arm wrestle the Chef for the recipe, and although I lost 2 out of 3 he felt that I had made a good showing and gave it to me any way.

Peanut Butter Pie

 All deserts are made from scratch and headlining the menu is the world famous bread pudding. I have also enjoyed the peanut butter pie. Make sure you save some room, this is the good stuff. It will leave your sweet tooth craving for more.“The Glacier BrewHouse is a package.”

you get the feeling it’s a special place to come to. When it’s really moving here it is great fun to watch the people, the noise rising, the cooks on the front line , flames coming off the grill it’s a quite a show.
Shawn came to Alaska for the first time 5 years ago and was a chef for the summer at Denali. He liked it so much that the next summer he packed up his car and hit the Alcan. With experience from the Top of the World and the Marriott, Shawn brings a wealth of experience to bear on the kitchen of the BrewHouse and it shows in the high caliber of meals presented.

The Glacier BrewHouse has Wi-Fi. Make it a working lunch! The menu is on the internet and changes weekly. Reservations are recommended for dinner and parties of eight or more. There is beer to go and you can even take a tour of the brewery.

Glacier Brewhouse Recipe
BBQ Salmon

Glacier BrewHouse Bbq Salmon

 

 

Ingredients:                                                           

1 salmon Filet


6oz-mashed potatoes


1 Tbsp citrus vinaigrette*


½ oz Baby Arugula


¼ yellow pepper


½ roma tomato


2 Tbs bbq sauce*


½ t seasoning salt*


½ t olive oil


Matchstick potatoes*


1Tbs balsamic reduction

 

Procedure:


Oil and season salmon, grill presentation side first. Turn 45* to create grill marks halfway through cooking process. Turn fish over and baste with bbq sauce- complete cooking process to 120 degrees. Place potato at the 2 o’clock position on plate
Drizzle balsamic reduction from 9 o’clock to 6 o’clock in zigzag pattern.


Toss arugula, pepper, and tomato with citrus vinaigrette, place tightly next to potatoes at 10 o’clock. Don’t cover up your zigzag pattern with the arugula.
 Place grilled salmon off the potatoes at an angle from 6 o’clock to 3 o’clock. Garnish with matchstick potatoes in the mashers and serve. Serves 1

Marks note. This recipe is for professional kitchen use and SHOULD be tried at home. 
Vinaigrette, use what you have around, the key here is not to overpower the main entrée but to lightly accompany.
Bbq sauce: Well not all secrets where revealed. I would spice up any ordinary bbq sauce, add some Bourbon and slightly reduce
Seasoning salt, use your favorite flavor. Matchstick potatoes can be found at your local store. Don’t be overwhelmed by the presentation thing.  Just look at the picture and it will all make sense. Just take your time and remember, cooking is fun and good food is meant to be shared.
