Roughing it easy, hit the open road with The Trailside Gourmet

Pineapple Upside-down Cake

(Prepared in a #10 Dutch oven)

(Heat, a mature bed of campfire coals)


Ingredients:

1 Box of yellow cake mix

2 eggs or eggbeaters

1-cup oil

1-cup brown sugar

1 stick butter

1 Can sliced pineapple

1 jar maraschino cherries

 



Procedure:

Get a good set of coals going on your campfire. The key here is slow even cooking.

In a large bowl mix cake powder with eggs, oil and water. For a great flavor, substitute the juice from you can of pineapple for some of the water required.

Melt butter in Dutch oven and add brown sugar. Do not burn.

Place a layer of pineapple rings on the bottom of pan in your brown sugar mixture. Reserve the remaining rounds in case some stick to the bottom.

Next put a cherry in every pineapple round.

Pour Cake mix over the top of fruit and place lid on oven.

Keep the Dutch oven over the even heat source of coals. Cook for approximately 35 minutes. Give it look and adjust time accordingly.

When ready remove from heat source and let cool for about 10 minutes. Remove lid and turn you pan upside-down on serving tray. A tasty treat will fall out and present its self. If any pineapple slices stay in your pan, no worries. Take your reserved slices and replace.

Enjoy a treat guaranteed to cheer up even the unhappiest of campers!
